Instructions:

1. Preheat your oven to 350°F (175°C). Spread the almonds evenly on a baking sheet and toast them for about 8-10 minutes or until they turn golden brown. Set aside to cool.


2. Line an 8x8 inch (20x20 cm) baking dish with parchment paper or grease it with butter to prevent sticking.

3. In a heavy-bottomed saucepan, combine the sugar, butter, water, and salt. Place the saucepan over medium heat and stir continuously until the sugar has dissolved and the mixture comes to a boil.

4. Attach a candy thermometer to the side of the saucepan. Let the mixture simmer, stirring occasionally, until it reaches the "hard crack" stage, which is around 300°F (150°C) on the candy thermometer. This process may take around 10-15 minutes.

5. Once the mixture reaches the hard crack stage, remove it from the heat and stir in the vanilla extract.

6. Carefully pour the hot toffee mixture into the prepared baking dish. Allow it to cool slightly for a few minutes.

7. While the toffee is still warm, press the toasted almonds into the surface, spacing them evenly and pressing them gently into the toffee.

8. Let the almond toffee cool completely at room temperature until it hardens. You can also place it in the refrigerator to speed up the cooling process.

9. Once the toffee has completely cooled and hardened, lift it out of the baking dish using parchment paper or by loosening the edges with a knife. Place it on a cutting board and cut it into bite-sized pieces using a sharp knife.
